You can. Depending on the effort you put into knowing certain foods glycemic index the better off you’ll be. Fiber has a carb count but a very low glycemic index and very little is absorbed into the bloodstream. Whereas potatoes have a very high glycemic index and the starch is converted to glycogen and stops the body from using stored fat for energy. Good luck!
